INGREDIENTS:
- 1 cup Wild Harvest® All Natural Cranberry Juice
- 2 tablespoons white wine vinegar
- 2 tablespoons Wild Harvest® Organic Dijon Mustard
- 1 teaspoon freshly ground Wild Harvest® All Natural Sea Salt
- ? teaspoon white pepper
- 2 tablespoons Wild Harvest® Organic Extra Virgin Olive Oil
- 1 (8 ounce) package Wild Harvest® Organic Romaine Lettuce
- 1 cup dried cranberries
- 1 cup grated Pecorino Romano cheese
- 1 cup macadamia nuts, toasted, coarsely chopped
- 1 cup sliced shallots
DIRECTIONS:
- In small bowl, whisk together first 5 ingredients; slowly drizzle olive oil into vinaigrette while whisking.
- Toss romaine with vinaigrette; divide among salad plates.
- Top salads with cranberries, cheese, macadamia nuts and shallots.
